Phaldari Phirni

Rice, strawberries and strawberry come together in this South Asian dessert, flavoured with cardamom and saffron and simmered on the stove.

    Firstly, prepare the rice paste in a mixie by grinding together 150gms rice and 150 gms. Water.

    Keep aside. Bring milk to a boil. Add powdered green cardamom and stir well. Add rice paste, sugar and saffron that has been dissolved in water.

    Stir well. Cook till the sugar is dissolved and the rice is cooked. Pass through a sieve into another bowl.

    Mix well and cool. Keep aside. Put the chopped strawberries in a bowl (traditionally, in India, earthen"sakoras" are used).

    Pour the above prepared phirni over these. Chill the phirni in order to allow it to set. Chop a strawberry in the shape of a fan and garnish the chilled and set phirni with this. Serve chilled.
