Coconut Barfi
Coconut cooked in a pan and perfumed with cardamom and saffron for a South Asian dessert.

Mix all purpose flour and ghee in a bowl and knead thoroughly to prepare a dough. Cover it with a clean and wet cloth. This is done to prevent it from drying.

Now, in another bowl, mix together the grated coconut, khoya and sugar powder. Fold in the cashewnut powder and cardamom powder.

Make small puris now from the all purpose flour dough. Stuff the puris with the mixture you have prepared. Give it the shape of puris.

Now, melt the remaining pure ghee in a wok. Fry these stuffed puris in ghee. Sprinkle with saffron threads, chopped peeled almonds, coconut powder and rose petals. Allow to cool down to room temperature.
