Green Beans with Panch Phoran and Almonds
A Bengali dish of green beans, panch phoron and slivered almonds, seasoned with cayenne and turmeric and simmered on the stove. Finish with toasted almonds.

Fill large pot with enough water to cover the beans and bring to a boil. Add beans and 1/4 tsp salt; boil 3 minutes. Drain and set aside.

In a large skillet, heat oil over medium heat. Add the panch phoran; stir until it begins to pop, about 30 seconds.

Add the onion and saute until it begins to brown, about 4 minutes. Add the garlic and cook another 2 minutes. Add the cayenne and turmeric and stir.

Add drained green beans and lemon juice, stir and cook until beans are heated through, about 2 minutes. Stir in black pepper and salt to taste.

Put into serving bowl and garnish with toasted almonds.
