
Hyderabadi Kacchi Gosht Biryani
The crown of Deccan cuisine: raw saffron-yogurt-marinated goat layered beneath par-cooked basmati and sealed under dum, so meat and rice finish together in one perfumed vessel. The kacchi (raw-start) method is the harder, more revered form.

Marinate raw goat in yogurt, half the birista, ginger-garlic, chilies, spices, herbs, lemon, salt. Rest 3–4 hrs (ideally overnight) — non-negotiable for kacchi.

Par-cook (70%) soaked basmati in heavily spiced, salted water; drain while grains still have bite. Under-cooking is correct — dum finishes it.

Layer raw marinated goat in the pot base; top with par-cooked rice; scatter saffron milk, remaining birista, mint, ghee, kewra.

Seal (dough lute or foil). High heat 4–5 min to build steam, then lowest heat over a tawa ~50 min. Do not open. Rest 15 min sealed; lift layers gently to serve.
