Spice-rub the lamb heavily and slow-roast (or steam then roast) for hours until falling off the bone.

Cook the rice in spiced stock with ghee until fluffy and fragrant.

Mound the rice on a great platter, lay the lamb over it, and shower with fried nuts, raisins, and onion.
