Kibbeh — the Family (Nayyeh, Saniyeh, Rass, Labanieh)
Often called Lebanon's national dish — a bulgur-and-meat paste worked into a whole family of forms: raw (nayyeh), baked in a tray (bil-saniyeh), fried torpedoes (rass), and simmered in yogurt (labanieh).

Make the kibbeh paste (see technique): pound cold lean meat, soaked bulgur, grated onion, baharat, salt to a smooth elastic dough.

Hashweh: brown ground lamb with onion and spices; fold in toasted pine nuts.

For bil-saniyeh: press half the paste into an oiled tray, spread hashweh, top with remaining paste; score diamonds; drizzle ghee.

Bake at 200°C until deep golden and crisp; rest before cutting on the score lines.
