The Levant's most theatrical family dish: fried eggplant or cauliflower, meat, and spiced rice layered in a pot and flipped onto a platter at the table, emerging as a standing golden cake. 'Upside-down,' and the flip is the event.

Simmer the meat with whole spices to make a flavorful broth; fry the eggplant and cauliflower until deeply golden.
