Orange and Olive Salad from Morocco

A Moroccan salad of kalamata olive, oranges and apple cider vinegar, seasoned with paprika and cayenne and chilled before serving.

    Peel the oranges and slice or cut into bite sized pieces. Chop olives and put in a bowl with the oranges.

    Blend olive oil, vinegar, garlic, paprika, cayenne pepper, salt,and pepper and pour over the oranges and olives. Mix well.

    Refrigerate for a few hours to allow the flavors to blend, or you can serve immediately. Add the parsley just before serving.
