Mexico's great spit-roasted taco, descended from the shawarma brought by Lebanese migrants — here in the halal form its own ancestry suggests: marinated lamb or beef on the trompo, shaved onto corn tortillas with pineapple, onion, and coriander.

Blend a chili-achiote adobo with vinegar and pineapple; marinate the thin lamb/beef slices for several hours.
